That is exactly what the contour-cut acrylic backing is for: it holds every letter on one plane even when the wall behind is uneven. For pubs with stone, clinker or half-timbering this is the most reliable solution, because nothing needs readjusting.

For fixing into natural stone we recommend plugs in the joints rather than the stone itself – that holds reliably and can be removed later with little trace. Spacers push the name a little off the wall so the glow becomes visible on the masonry.
With pub names containing an apostrophe we pay particular attention to letter spacing so the characters do not crowd together.
Continuous use is no problem: a pub sign of this size runs for around eight hours an evening and draws less power than a single old filament bulb. The light source is rated for many thousands of operating hours.
